Who doesn’t want a zesty sweet tangy key lime pie! I mean, just thinking about it just wanna make you drool. Well, I finally made an alkaline key lime pie after days of planning, yay!
You can make this particular key lime recipe in a variety of ways. And also with a handful of substitutes, in case you don’t find some. You can just get creative, maybe replace coconut milk with oil or walnuts with pecan, sea moss with avocado.
Being alkaline and without any eggs, it’s great to see that this pie sets good.
What You’ll Need to make Alkaline Key Lime Pie
This recipe is perfect for any occasion, and it’s easy to make too. All you’ll need is a few simple ingredients, and a blender. So get ready to indulge in some sweet goodness 🙂

- You’ll need 5 to 7 key limes for this recipe. Try to choose ripened limes that give enough juice when squeezed. Learn how I did it here. 5 key limes should give you about 8 tablespoon of juice. You can have 1 or 2 extra key limes for the zest afterwards.
- We will use walnuts and coconut flakes for the crust. If you don’t like walnuts, it’s okay to use pecans too.
- For the filling, we will need 2 Avocado or one large one, 2 Cup Walnuts of walnuts, half a cup of coconut oil and some approved sweeteners such as agave syrup.
- For the second recipe, the filling calls for coconut cream and butter

If you are someone that don’t like avocado (I know quite a lot of people do), you can make the alternative so there’s no excuse not to make an approved alkaline plant based key lime pie.

Does Key lime pie need to be refrigerated?
Generally speaking, it is a good idea to refrigerate your pie if you are not going to eat it right away. However, there are some exceptions to this rule. If you are using a pre-made crust, for example, you do not need to refrigerate it.
Another exception is if you are using a fruit pie filling that is high in acidity. Acidic fruits like apples and cherries can actually keep your pie fresh longer at room temperature. So, if you are using one of these fillings, you can feel free to leave your pie out on the counter.
Of course, ultimately it is up to you whether or not to refrigerate your pie. If you are unsure, it is always better to err on the side of caution and put it in the fridge. That way, you can be sure that your pie will be fresh and delicious when you are ready to eat it.
How do you know when key lime pie is done?
- One way to find out whether the pie is done baking is by using a toothpick or skewer, inserting it deeply into the center of the filling without hitting any part of the crust. If you don’t see any liquid around it on the crust, then that means all parts have been thoroughly baked and because there’s no sugar in it, your crust should also be perfectly crispy.
- Another way to tell if the pie is done is by gently touching the filling in the center with your finger. If it feels firm, then it’s done. Another good test is to give the whole pie a very gentle shake. If the filling looks like it’s set and doesn’t jiggle, that means it’s done.
- If you want to be extra sure that your pie is done, you can always use a food thermometer. Insert it into the center of the filling and look for a reading of 160 degrees Fahrenheit.
- Remember, no matter what method you use to check if your pie is done, it’s always better to err on the side of caution and leave it in the oven for a few extra minutes than to take it out too early and end up with an undercooked pie.
- Once your pie is done, remove it from the oven and let it cool on a wire rack for at least 30 minutes before slicing and serving. This will give the filling time to set up so that each slice is nice and neat.
Why is key lime pie runny?
Key lime pies are usually runny because the recipe does not call for enough avocado or too much liquid. This causes the filling to be too loose and watery.

How to make Key lime pie less runny?
There are a few things you can do to thicken up your key lime pie filling and prevent it from being runny.
- First, make sure you are using enough avocado. Avocado should not be too ripe.
- Secondly, use a little less liquid like syrups and water. This will help thicken it up.
- Finally, you may want to add a bit of sea moss or cornstarch to the mix. This will help to bind the ingredients together and make the filling thicker.
If you follow these tips, your key lime pie should turn out nice and thick, without being runny.
Why did my key lime pie curdle?
- One potential reason your key lime pie might have curdled is that you used milk or other dairy products. Also, you may not have used enough key lime juice. Key lime juice is essential to the recipe, so make sure to use enough of it to get the desired flavor.
- Another possibility is that you didn’t cook the pie long enough. The key lime pie should be cooked until the filling is set and no longer runny. If you take it out of the oven too soon, the filling will be runny and might curdle.
- Finally, make sure to cool the key lime pie completely before serving. If you serve it while it’s still warm, the filling might start to separate.
Why is key lime pie so good?
Key Lime Pie is good because it tastes tart and sweet at the same time.
The key lime juice in Key Lime Pie has an acidic edge that balances its sugar content, so you still get that sweet taste with a puckering finish. And the coconut/sea moss ingredients in the recipe add a velvety smoothness to the filling.
Final Notes:
The alkaline key lime pie recipe is a healthy and delicious alternative to the traditional key lime pie. This recipe uses natural ingredients that are high in alkalinity and low in acidity, making it a healthier choice for your dessert menu.
